Shiitake Mushroom and Green Onion Skewers with Rub with Love Triple Garlic Teriyaki
Serves 4
Instead of shiitakes, you can use quartered portobello mushroom caps, but they will take a little longer to cook.
16 shiitake mushroom caps, left whole if small or cut in half if large
4 green onions, root ends trimmed, cut in 2-inch sections
8 bamboo skewers, soaked in cold water 30 minutes and drained
Vegetable oil, as needed
Rub with Love Triple Garlic Teriyaki Sauce
Fire up the grill for medium heat, or preheat the broiler. Alternate mushrooms and green onions on each skewer. Brush the skewers lightly with oil. Grill or broil the skewers, turning as needed, until the vegetables are cooked through, about 8 minutes. Brush with teriyaki sauce during the last 2 minutes of cooking. Serve with extra teriyaki sauce on the side.
