Exotic Mushroom Rub with Love Quesadilla

1# sliced mushrooms

2 tablespoons canola oil

1 tablespoon Mushroom Rub

2 tablespoon butter, unsalted

1 teaspoon minced shallot

1 teaspoon minced garlic

1 ounce dry white wine

1 teaspoon kosher salt

Non-stick cooking oil spray

Two large flour tortillas

1.5 cups shredded mozzarella

1 tablespoon minced chives

¼ cup arugula

Mexican crema or Sour Cream (for garnish)





In a mixing bowl, combine the sliced mushroom, the canola oil, and the rub. Mix these ingredients together thoroughly. Heat a large sauté pan over medium heat. Once hot, add the mushroom mixture to the hot pan, and stir with a wooden spoon. Let the mushrooms cook for two minutes, then mix them around. Let cook for another two minutes, and then remove the mushrooms from the pan and place back into the mixing bowl. Add the butter to the pan and return it to the heat. Once the butter has stopped foaming, add the shallots and garlic to the pan and stir vigorously. You want to scrape up all the little bits of mushroom rub from the bottom of the pan. Once the garlic and the shallot have become translucent, add the wine and the salt. Cook until the wine has mostly evaporated, and then add the garlic mixture to the mushrooms. Mix well and reserve.

Heat a non-stick pan, or a well-oiled griddle, to medium heat. Coat the cooking surface with some non-stick cooking oil spray. Add a ring of shredded mozzarella to the cooking surface, mimicking the size of the flour tortillas you are using. Immediately place the flour tortilla on top of this layer of cheese, and then place a larger portion on top of the tortilla. Use as much cheese as you prefer. Add half of the mushroom mixture on one side of the tortilla. Once the cheese is melty, add the chives and arugula. Use a non-stick spatula to fold the quesadilla in half. You want to flip the non-mushroom half over the mushroom half. Remove from the pan, and place in a low-temp (approx. 200 degrees) oven to keep warm while you repeat once more to make two servings. Serve with Mexican crema or sour cream and enjoy.
