Green beans w/Toasted Shallot Mustard & walnuts

Ingredients

1/2 Cup walnuts
2 Tablespoons olive oil (divided)
Salt & Pepper
1 lb. green beans, trimmed
1 Tablespoon Toasted Shallot Mustard
1 Tablespoon white miso
1 Tablespoon Rice Vinegar
1/2 teaspoon honey

Directions

  1. Toast walnuts in a 350 degree oven for 10-12 min and cool. 
  2. After a rough chop, toss nuts with 1 Tablespoon oil and season with salt & pepper.
  3. Bring pot of water to a boil, add green beans and cook about 3 min to crisp-tender. 
  4. Transfer beans to a bowl of ice water to stop cooking process.  Drain and pat dry.
  5. Whisk together Toasted Shallot Mustard, miso, vinegar, honey, 1 Tablespoon oil and salt & pepper. 
  6. Pour mixture over the beans and toss. 
  7. Top with walnuts.
