Rub with Love White BBQ Sauced Grilled Chicken Sandwich

Ingredients

White BBQ Sauce (Makes approximately one quart)

3 c mayo, (Hellman’s or Best Foods)
1/4 c water
½ c cider vinegar
3 t prepared horseradish
5 T ‘Rub With Love’ Smoky BBQ Rub
1 T salt
1 T sugar

Whisk all ingredients together in a mixing bowl until smooth. White barbecue sauce is excellent on chicken, pork, or as slaw dressing or dipping sauce. It will keep in an airtight container in your fridge for about a month.

 

Jalapeño Vinaigrette

3 jalapeño peppers

1/4 C white wine vinegar

2 T ‘Rub With Love’ Toasted Shallot Mustard

3/4 C canola oil

1/2 Tablespoon salt

2 1/2 teaspoons honey

 

Fry jalapeño peppers in a skillet until blistered and somewhat dark. Remove from heat and allow to cool, peel skins and remove stems and seeds.

In a blender, combine vinegar, chiles, mustard, salt and honey, slowly drizzle oil in once the ingredients are smooth. Taste and adjust seasoning as needed.

 

Jalapeño Slaw

3 jalapeños

¼ c shredded carrot, use a box grater

1 c shredded green cabbage

¼ c jalapeno vinaigrette (see recipe)

pinch of salt – to taste

 

Fry jalapeño peppers in a skillet until blistered and somewhat dark. Remove stem and roughly chop the peppers. Mix all remaining ingredients in a small bowl, set aside.

Directions

For the Chicken

4 chicken breasts

 

Cut chicken breasts flat or pound lightly with a meat mallet so that each piece will be slightly larger than the bun. Season chicken breasts generously with ‘Rub with Love’ Smoky BBQ Rub. Cook on the grill until cooked through, should read 165°F on an instant read thermometer.

 

Building the Sandwich

Toast your bun of choice on the grill cut sides down until nicely toasted, spread a bit of the white BBQ sauce on the bottom bun

Put down some slices of your favorite sweet pickle on the sauced bottom bun. We use bread and butter pickles.

Cover the pickles generously with the crunchy, spicy slaw.

Brush the chicken generously with the white BBQ sauce and place on top of the slaw.

Put your top bun on and enjoy!
