Seafood Rubbed Chicken Skewers

  • 4 bamboo or metal skewers
  • 1 1/2 pounds boneless, skinless, chicken thighs, cut into 1 1/2-inch pieces
  • 2 tablespoons Rub with Love Seafood Rub
  • Olive oil
  • Cilantro Mint Chutney (optional, see additional recipe)


  1. Fire up the grill.
  2. Divide the chicken between the skewers.
  3. Set the skewers on a large plate, then brush them with olive oil and pat the Seafood Rub on all sides.
  4. Allow the skewers to rest 5 minutes.
  5. Grill the chicken skewers, turning as needed, until cooked through, about 12 to 14 minutes.
  6. Remove from the grill
