Smoked Paprika Oven-fried Sweets

Ingredients

2-1/2 pounds medium-size sweet potatoes 
6 Tablespoons olive oil
1 Tablespoon “Rub with Love” Smoked Paprika
Kosher salt and freshly ground black pepper
 
 

Directions

1. Preheat oven to 450 degrees.
2. Cut the sweet potatoes lengthwise into 1/2-3/4 inch thick wedges. 
3. Place in large bowl, toss with the Smoked Paprika, season generously with salt & pepper then toss with the        oil. 
4. Divide between 2 baking sheets and spread evenly (be sure to get all the oil & spices from the bowl). 
5. Roast for 15—20 min, then turn the wedges and roast for approx 15 minutes until the potatoes are tender          and nicely browned. 
6. Remove from oven and season to taste with salt & pepper.  Serve immediately.
