2 Tbl ‘Rub with Love’ Veggie Rub

2 scallions, minced

2 Tbl lemon juice

2 Tbl Dijon mustard

1 cup mayo

1 Tbl garlic oil* (recipe below)

1 cup buttermilk

Salt & pepper to taste

½ Tbl tarragon, minced


Pulse Veggie Rub in spice grinder to break down the big seeds. Place in a large mixing bowl. Add the remaining ingredients and whisk together. Toss with your favorite salad mix or serve with crisp vegetables.


Garlic Oil:
(Makes one quart)

1 cup olive oil

3 cups canola oil

4 oz peeled garlic cloves

Combine all ingredients in a heavy pot and simmer over low heat until garlic is soft and light brown in color. Allow to cool, strain into a jar. Garlic oil will keep for about a month in your refrigerator.
