Veggie Rub Dip

Roasted veggies in the dip

Ingredients

2 Cups veggies cut into 1-2" pieces (carrots, broccoli, peppers, whatever you have)
1/2 Cup olive or vegetable oil
2 Tablespoons Veggie Rub - divided
1/2 Cup sour cream
1/2 Cup Greek yogurt
 

Directions

  1. Preheat oven to 400 degrees.
  2. Spread veggies on baking sheet and drizzle with 1/4 cup olive or vegetable oil.
  3. Mix with 1 Tablespoon Rub with Love Veggie Rub to evenly coat.
  4. Cook for 10 min. and toss veggies. 
  5. Cook 10 min. longer until soft. 
  6. Cool and chop to a fine dice-should yield approx. 1 Cup.
  7. Mix sour cream, yogurt and diced veggies with 1 Tablespoon Rub with Love Veggie Rub.
Serve with crackers or veggies.
