Exotic Mushroom Rub

Dried porcini mushrooms and Herbes de Provence are the star ingredients of this aromatic rub. In our restaurants, we use it as a finishing component to our award-winning dry-aged ribeye steaks at Cuoco and also rub it on our rotisserie'd tri-tip at Seatown. Earthy, with a subtle floral brightness, your steaks, roasted chicken or even grilled venison will have a deep & rich flavor.

I use the exotic mushroom rub in my homemade veggie and chicken sausage soup. After I saute onions and mushrooms and garlic, I add a couple teaspoons of the rub and stir it around for a minute before I add chicken stock, more chopped veggies, slices of chicken sausage, etc. The rub gives the soup subtle flavor and complexity and I always get raves for it.
